SAKEHITOSUJI-brand plum wine is matured in junmaishu (pure rice wine) added with a minimum required quantity of sugar.


The junmaishu used for this plum wine is made from rare Omachi rice, which is suited to sake (rice wine) brewing, added with malted rice. The flavor of the junmaishu brings out the original flavor of the plums in the wine.

Toshimori SAKE Brewery produces and sells a sugarless, additive-free type of plum wine as well, which is made from plums and junmaishu only.

Toshimori SAKE Brewery is located in the Karube district of Okayama Prefecture, the production center of Omachi rice. Omachi rice is known in Japan as high-quality special rice suited to sake (rice wine) brewing. Toshimori SAKE Brewery, a dedicated rice wine maker, has been performing quality-oriented rice wine brewing since it promoted the cultivation of Omachi rice, which had been abolished once in the past.

SAKEHITOSUJI-brand plum wine is made with junmaishu brewed from the Omachi rice of the Karube district added with Oshuku plums, the most suitable type of plums for plum wine making. Each plum is washed carefully by hand, soaked into the junmaishu, and aged in the storehouse to extract the essence of the plums. Toshimori SAKE Brewery's quality-oriented plum wine is produced as a result of the accumulation of this steady work.

Toshimori SAKE Brewery produces and sells Junmai Umezake as well, which is a sugarless, additive-free type of plum wine unprecedented in Japan. We made this product in pursuit of pure plum wine of high quality from plums as we made junmaishu with from rice and malted rice with no additives in pursuit of pure rice wine.

Standard plum wine is made from distilled liquor added with unripe plums and sugar. SAKEHITOSUJI-brand plum wine is made from junmaishu, plums, and a minimum required quantity of sugar with no other ingredients added. We decided to make this plum wine because we wanted to make full use of the effect of the plums in the hope that every customer would enjoy the original flavor of the plums.
